Join a Wild Alcohol & Foraging course in Surrey to learn about the entire wild brewing process, from selecting fruit to bottling. Over three days, you'll explore private woodlands in the Surrey Hills during the autumn harvest season. The course includes two consecutive days of instruction, followed by a return session six weeks later. These courses elevate woodland foraging to a new level, allowing you to collect ripe fruits and plants to create various drinks such as Elderflower Champagne, apple cider, and blackberry gin. Your instructors are Lizzy Maskey, a skilled foraging and bushcraft expert, who guides foraging walks and shares knowledge of plants, folklore, and sustainable harvesting. Rupert Loch, a science teacher, winemaker, and bushcraft tutor, will teach you how to craft delicious, naturally flavoured alcoholic beverages from your foraged ingredients. The hands-on course involves collecting apples and pressing them, assisting with fermenting setups for beer and champagne, and preparing botanicals to flavour your gins and whiskeys. By the end of day two, your wild alcohol will be fermenting, and after six weeks, you’ll return to taste and bottle your creations, taking home your share of the wild-brewed drinks. In addition to your beverages, you’ll gain the skills and knowledge to continue making wild alcohol and foraging independently.

    Workshop Itinerary

    Over Two Consecutive Days:

    • Take a relaxed guided walk to identify and gather wild ingredients
    • Harvest apples from a traditional orchard, then wash, chop, press and juice them
    • Create hot infusions with base spirits to develop custom gin blends
    • Set up fermentation vessels (demijohns) for cider and sparkling-style drinks
    • Learn the science behind fermentation and what’s happening inside each bottle
    • Receive reference materials to support continued learning and experimentation
    • Discuss the legal considerations of foraging and home brewing

    Return Day – Six Weeks Later:

    • Come back for a one-day session to complete the process
    • Your ferments will have developed, converting sugars into alcohol
    • Strain, bottle, and begin conditioning your creations
    • Participate in a guided tasting to sample the results of your work
    • The workshop needs a minimum of 4 participants to run - If numbers are not met, you can rebook onto the next course
    • You may join a group of up to 10 participants in this workshop
